Short bioPaulo Sobral is Full Professor at “Universidade de São Paulo” (USP), Dean of the “Faculty of Animal Science and Food Engineering” (FZEA-USP), and Researcher of Conselho Nacional de Desenvolvimento Científico e Tecnológico (CNPq), level 1A. He is teacher in “Physical-Chemistry of Foods” and “Mass Transfer” and his researches has been focused in drying of food, glass transition of freeze-dried pulps of tropical fruits, meat quality and edible and/or biodegradable films based on biopolymers, with 142 published papers ( h-index= 41). He is member of the Board of the “International Association for Engineering and Food” (IAEF) and member of Advisory Board of Iseki-Food Association (IFA). He is also Associate Editor of the “International Journal of Food Studies” and member of the Editorial Board of “Food Engineering Reviews”, “PeerJ”, “Ciência e Tecnologia de Alimentos” and “Newsletters of IFA”, and Ad hoc Referee of CNPq, CAPES and FAPESP.
