Short bioGaston Ares is Associate Professor in Sensometrics and Consumer science at Universidad de la República (Uruguay). He has extensive experience in research and teaching in the area sensory and consumer science and has collaborated with several research groups worldwide. He leads an interdisciplinary research group specialized in consumer behavior, particularly in consumer reaction towards public policies targeted at achieving healthier eating habits. He has authored more than 210 articles in international refereed journals (h-index 39), several book chapters and numerous presentations in scientific meetings. Gastón was awarded with the 2011 Food Quality and Preference award for a young researcher, for his contribution to sensory and consumer science. He serves as Associate Editor of Journal of Sensory Studies and Food Research International.
General Research interestsHis research areas are consumer behaviour and sensory science, with a main focus on the consumer. His research focuses on the exploration of new methodologies to further understanding consumer perception, in particular sensory descriptive techniques. He also has a strong interest in multivariate data analysis (sensometrics).
